The Waterford youngster tragically passed away in May

RTE star Eunice Power has opened up about the tragic death of her young son in a teary interview.

The TV chef sadly lost her 24-year-old son, Jerome, back in May 2025, after he died suddenly in their family home.

Jerome was a keen amateur jockey and a graduate of the pony racing circuit, who had a handful of rides in point-to-points in recent years. 

The Waterford teen was also a talented GAA player who lined out for his local club, Brickey Rangers.

In an interview on RTE Radio 1 with Miriam O’Callaghan, grieving mum Eunice cried: “It’s all very sort of fresh for us.

“Jerome was wild, adventurous. Nothing he did would ever surprise me, except that he is not around now.”

The Today show cook continued: “He died very tragically, very suddenly and we are just lost without him.”

Eunice is still a loving mum to her two sons, Michael and Kieran, and highlighted how she “tries to stay pragmatic” with them.

The devastated mum added: “I try to put one foot in front of the other all the time.”

Eunice told how her son’s final days were ironically documented within her latest cookbook.

The star said: “When we were taking the photographs for the cookbook, Jerome was at home that week, and he was doing a project for college.

“He was going around to all of us looking for help on this project, as everything with his college, usually took a village to do it.

“But he loved the photographs, and he loved the action and eating all the food afterwards, he had great fun with everyone.”

Eunice revealed: “Some of the lovely photographs I have of him were taken on the Friday before he died.

“So, for me it was really important to finish the book, because he was so proud of it.”

‘SPECIAL TO ME’

She continued: “Your children will never tell you they are proud of you, because it’s important for them that you are kept in your place.

“But he was genuinely proud of it, he thought this book was ‘class’. So, the book is really special to me because he was involved in it and I can see his hands all over the pages.”

Miriam pointed out that Eunice’s book has “almost become a tribute to Jerome”.

Eunice agreed: “It has. The dishes in the book are food that he would have been brought up on.

“He would have enjoyed them all over the years.”
